Say no to dull knife or tools, all what you need is Natural sharpening stone. Natural sharpening stone - medium grade (~2000/3000) - is made 100% of grey sandstone, the colour might differ from the picture, but it does not influence the performance or durability of the stone. 1. How to use it ? Soak the stone for 5 minutes in the water or just few drops of oil on the surface. Place the stone on a flat surface(topboard, choping board or a table) 2. Find your sharpening angle = Find your preference. But what does it mean? The steeper the angle the thiner cuting edge is. The thiner the cuting edgs is the sharper knife is. This have it's cons and prons. Thiner cuting edges is weaker and last shorter time sharp. Thicker cuting edge will last longer but will not be as sharp as thin one. Depending on the manufactor of the knives the edge of the knives might vary. Japaneese styled knifes are sharpening at 8 to 12 degrees. Western styled knifes are sharpening at 12 to 20 degrees. 3. This is theory but what chef would say? Find your own angle. Are you using knife or tools very often and dont have time to sharp them every week, pick higher angle. You love to shave with this same knife You just made dinner pick lower angle. 4. Angle is set now it's time to repeat honing until is sharp! Place your knife flat on the stone, lift the back of the blade until you notice there is no gap between cuting edge and the stone. If you not sure use 2 pound coins to set abou 15 degrees angle. Use the whole surface of the stone. Start from the tip and finish on the hill of the blade. Use a medium pressure. 10 strokes on each side and go down till 1 repetition and then move to the finer stone, repeat this same procedure.
