- Quality Japanese Matcha WILL form lumps if NOT prepared correctly, the tiny size of the particles makes it ELECTROSTATIC so it MUST be SIFTED through a fine tea strainer into your cup before adding water, the water MUST be 80°C or lower. Smooth, easy to mix and great to taste. It’s fine and silky to touch, with particle sizes that are only 5-10 microns. The texture is as fine as baby powder.
- Tasting Notes Ceremonial organic matcha that is mild and smooth, with a delicate aftertaste and distinctive umami sweetness. A luminous emerald green and rich fragrance. Can be prepared as a koicha (thick tea) or usucha (thin tea) and used in lattes.
- Cultivation AAA is made exclusively with leaves from the first harvest, carefully selected from the top of the plant. Tea leaves from different plant and tea fields are combined in the same way grapes of different varieties are combined to create some wines. This is where the invaluable tea masters come in, their palate, knowledge and extensive experience are used to blend the leaves to create the different grades.
- The most important aspects of matcha are colour, flavour and aroma, but not every tea leaf contains a balanced amount of these aspects. Blending therefore, is an integral part of enhancing the desirable characteristics and creating great tasting, high quality matcha. During blending our tea master segments distinct aspects and levels of quality into several different grades.
