This high carbon steel alloy knife is used to slice raw fish for sashimi and sushi. The pointed tip identifies it as an osaka-model, rather than a tokyo knife, which has a blunt end. Comes from a top end series of drop forged knives with traditional wooden handle. Each knife is individually packed in a PET presentation blister. Limited edition, specially made for Hendi.
